Friday, October 26 – Spicy Cauliflower “Rice”

Ingredients

1 tablespoon coconut oil, for the pan

3/4 cup chopped red pepper

3/4 cup chopped green pepper

1/2 cup chopped red onion

1 tablespoon minced jalapeno

1 tablespoon minced garlic

1/2 a head of cauliflower, riced (about 4 cups)

2 tablespoons tomato paste

juice from half a lime

1 1/2 tablespoons chili powder

2 teaspoons cumin

1 teaspoon sea salt

1/2 teaspoon black pepper

1/4-1/2 teaspoon cayenne pepper

 

Directions

In a large frying pan, over medium heat, melt coconut oil.

Sautee red pepper, green pepper, red onion, jalapenos, and garlic for 2-3 minutes. Add cauliflower ‘rice’ and continue to sautee for 5-7 minutes.

Stir in all remaining ingredients until combined. Continue to cook until all of the vegetables are softened and the flavours have blended completely; approximately 5 minutes.
