Sunday, October 28 – Swedish Meatballs
Ingredients
3 pounds ground meat (a combination of beef and pork is great but anything you choose to use will work)
1/2 onion, minced
2 teaspoons garlic
1 tablespoon parsley
1 egg
1/4 cup almond meal
2 tablespoons coconut oil
3 cups beef broth
1/4 cup coconut milk
salt and pepper
1/4 teaspoon nutmeg
1/4 teaspoon all spice
Directions
Combine ground meat, onions, garlic, parsley, egg, almond meal, and some salt & pepper in a large bowl. Form into 1″ diameter meatballs.
In a large frying pan, heat coconut oil. Cook the meatballs (in batches, if necessary) and remove from pan.
Add tapioca starch to the pan and whisk until it’s dissolved. Pour in beef broth and bring to a boil. Let the mixture thicken slightly. Stir in coconut milk, nutmeg, all spice, and salt & pepper. Reduce heat and thicken until it just coats the back of a spoon. Pour meatballs back into the pan, stir to cover them in the sauce, and serve.
